Dough Dockers

Air pockets have the tendency to burn, and therefore tarnish the taste of the pizza. Furthermore, air pockets disturb the careful placing of toppings on pizzas. Dough dockers give pizza chefs the ability to put a small pin hole in these pockets in order to flatten them out during the baking process.
